| In my home, we started a school week with no soup made and no pasta sauce in the freezer. I soaked a large quantity of black beans on Sunday which fed us Tuesday evening – but I’ve scrambled each morning to send my kids to school with lunch. This is my reality, as a privileged white woman in a dual-income household, with a deep freeze in the basement and an adequate grocery budget. My kids’ school does not have a cafeteria; if it did, and if it served healthy food that my children would eat, it would bring tremendous value to my life and I would want the workers who prepared that food to be valued, including with adequate wages. This inspiring cafeteria shows what is possible! In the meantime, this is an excuse to share the unique “carrotini” sandwich that my kids took to school on Tuesday. May it help you out in a pinch! As an organization serving children and youth across the province, we want to take the month of March to not only recognize, but uplift, engage, and empower youth leaders in food. | Ingredients: - Large carrot* grated
- 1 Tbsp minced red onion or chives
- 1 Tbsp chopped celery or kale stems
- ½ Tbsp sunflower seeds
- 2 Tbsp tahini
- 1 Tbsp lemon or lime juice or apple cider vinegar
- Salt and pepper
- Optional toppings:
- Salad greens, thin apple slices or cheese slices
*Quality of the carrot is key. Pick up a bag from a farmers' market or local retailer that is sweet and juicy. Instructions: Mix together to form a sandwich filler the consistency of tuna salad. Adjust amounts as needed. Serve on bread or in pita.
